Style: Farmhouse Ale

Mixed-fermentation farmhouse ale. Fermented with our house culture in oak. Dry, peppery, with a gentle Brett character that evolves over time.

Hops: Saaz, Strisselspalt

Malt: Pilsner, Wheat, Rye

Culture is maturing. More funk, softer acidity. Hay and stone fruit on the nose. Our best saison yet.

Markers: pepper, lemon, funky

Hops: Saaz

Malt: Pilsner, Wheat

First pitch of the house culture. Pepper and lemon zest up front, dry finish. Young — will benefit from time.

Markers: barnyard, lemon, oak

Hops: Saaz, Strisselspalt

Malt: Pilsner, Wheat, Spelt

Added spelt to the grist this time — more rustic, more earthy. The house culture is really coming into its own. Lemon, hay, and a whisper of oak.

Spring saison. Lighter body, brighter acidity. White pepper and wildflower on the nose. Brewed for the first warm weekend.
