Fitzcarraldo
Style: Pale Ale
Our house pale ale, named for the neighborhood we call home. Soft water profile, heavy whirlpool additions, dry-hopped with Mosaic and Citra. Hazy, juicy, low bitterness.

Added a touch of wheat to the grist. Juicy, saturated hop character. Passionfruit and pineapple. Best batch yet.
Batch 009
Brewed — 5.5%
Markers: mango, pine, soft
Hops: Citra, Mosaic

Swapped the dry hop ratio toward Citra. Much softer bitterness. Ripe mango and a hint of dank pine. Hazier than batch 1.

Batch 007
Brewed — 5.5%
Markers: blueberry, tangerine, green
Hops: Mosaic

First run of our house pale. Heavy on the Mosaic — blueberry and tangerine. A little greener than we wanted but very drinkable.
Batch 006
Brewed — 5.6%
Markers: tangerine, pine, hazy
Hops: Citra, Mosaic, Strata
Malt: Pale, Oats, Wheat
Summer pale. Heavy on the Strata for that dank, passionfruit punch. Hazy, soft, dangerous at 5.6%.
Batch 005
Brewed — 5.4%
Markers: grapefruit, pine, bright
Hops: Citra, Simcoe
Malt: Pale, Oats
New year, new hop combo. Citra and Simcoe together — grapefruit and pine in perfect balance. Bright and refreshing.
Batch 004
Brewed — 5.5%
Markers: mango, tropical, soft
Hops: Citra, Mosaic
Malt: Pale, Oats
First pale ale we ever made. We didn’t know what we were doing with water chemistry yet. Still delicious — mango and tropical fruit, softer than later batches.
Batch 003
Brewed — 5.7%
Markers: tropical, dank, hazy
Hops: Mosaic, Citra
Malt: Pale, Oats
Tropical and dank. First time we really pushed the dry hop rate. Mosaic and Citra in equal measure. Starting to figure out what this beer wants to be.
Batch 002
Brewed — 5.4%
Markers: citrus, pine, bitter
Hops: Simcoe, Centennial
Malt: Pale
Our second pale ale. Went old-school West Coast — pine and citrus, firm bitterness. Good but we wanted softer.
Batch 001
Brewed — 5.3%
Markers: grapefruit, pine, bright
Hops: Cascade, Chinook
Malt: Pale
The first pale ale we ever made. Cascade and Chinook — grapefruit and pine. More West Coast than what we make now, but it showed us we wanted to brew hoppy beers.
